and "Olio delle pendici" This type of oil we consider the "Classic" of our produce. The combination of organic cultivation, a modern system of harvesting by mechanical shakers and the austere solidity of this variety of olive tree, are the main ingredients for this golden coloured oil, very fragrant and sweet to the taste. Even when freshly pressed, this oil is not bitter or too spicy, but has an excellent flavour and is appropriate for boiled vegetables and for legumes. Characteristics:

October, when it is close to harvest time and the olive-groves are prepared
for the imminent picking, all olives are hand-picked from the olive trees
leaning out over the road or over rubble walls along the extreme border
of our lands, where it's hardly possible to put nets and so manual labour
is essential. The first oil, pressed normally in October is normally for
home use and never for sale. Characteristics: Organically produced, Acidity=0.45%, golden coloured with greenish nuances, delicate fruity taste, neither bitter nor spicy, very sweet tasting and not too strong, suitable for delicate food such as white fish and mixed salads.
